Fragrant vanilla-y pandan, shredded coconut, rich palm sugar

In Singapore, one of my mom's favorite treats growing up was a mochi-like, coconut-covered, vibrant green pandan rice cake, or “kueh”, that was filled with palm sugar syrup. We wanted to create a cookie version of this traditional sweet so that we could share the culture and flavors of these wonderful sweets from Singapore! These cookies are soft and have a complex vanilla-like flavor from the pandan essence. The palm sugar we use is like tropical dark brown sugar that pairs well with the shredded coconut we’ve mixed throughout.
